Date me

I made this the other day and just can’t get enough of it. This date spread makes for a delicious snack. Really. You can put it on rice crackers with almond butter or use it as a dip for fruit. Eating it by the spoonful is also good.

Another reason why I’m in love with this recipe is because it’s incredibly easy to make. I’m all about simplicity. Less is more, isn’t it? I think that’s why I love running so much. You can step right out your door and go for a run. No driving, no equipment, no nothing. Just you and the open road.

Date Me Spread 


20 medjool dates

1 cup water

1 tbsp fresh lemon juice

1 tsp vanilla extract

Place dates, lemon juice, vanilla extract, and 1/2 cup of water in food processor and process begin to blend. Slowly add the remaining water. Blend until completely smooth.

You may add more or less water depending on the desired level of thickness. For a thicker spread, add less water. For a syrup, add more water. Personal it by adding spices such as cinnamon or ginger. The spread keeps in the fridge for up to 3 weeks.
